There are more than 200 varieties of sambal on the Indonesian island of Java alone. If you’re unfamiliar, sambal is a versatile, spicy, but nuanced condiment that adds kick to everything from raw vegetables to grilled fish to fried chicken. We took that signature sambal kick and cooled it with cucumber and mint, then added lime for tartness. This combination of spicy and sweet is the perfect pickup for any day.
